Given that the latest post on the Island Creek Oyster blog is by the company's marketing director, it should be taken with a grain of salt, or perhaps a dash of Tabasco. However the post, which praises oyster eating as the cutting edge of American gastronomy and differentiates between oyster bars and "oyster bars," will still make you want to eat an oyster as soon as possible, and at the kind of oyster bar that doesn't merit quotation marks.
