"For me, simple food is really reflective of a humble origin, of making due with what is at hand, cooking in the moment, cooking emotionally," said Matt Jennings, chef/owner of the upcoming Townsman, speaking at The Roots of American Food Conference in Chicago last month.
"Simple food evokes a certain connection, a familiarity, and showcases an awareness of one's self and where you are and the relationship you're trying to have with the person across the table."
